Voici une recette que quelqun ma donne:
My wonderful mum taught me a wonderful recipe, buy ground almonds or do your own - you need two heaped tablespoons, small carton cream, a good curry powder or more ideally the following: 1.5 tsp corriander powder, half tsp cummin powder, a pinch of chilli, tip of a tsp of the following: ground cardamon, cloves, cinnamon and peppercorns (black preferable) or if you want to cheat 1 tsp BOUGHT garam masala, for a pound of veg (e.g. mushroom, courgettes, brinjal - egg plant, cauliflower, pinch of spinache - anything like peppers (not potatoes or carrots but veg that stir fry easily!) or chicken or meat. PER 1 pound of meat or veg, adapt for larger amounts.
Finely chop a large red onion, white will do, fry in generous oil that covers a saucepan so onions do not burn but go golden brown. Add a tiny piece of finely grated or chopped ginger and one to three cloves garlic (depending on taste), fry for a few seconds and quickly add the spices, reduce heat, add veg or meat and stir to coat in spices. Stir in the almond powder. Add some hot water so that there is enough juices to allow meat/ veg to cook. Cook the meat covered and check to ensure does not burn. Add salt to taste (remember must add some salt as it brings out taste of the spices. For meat kormas add veg like mushroom, peppers and courgettes etc towarsd end of the meat being cooked.
When meat/ veg cooked turn off the heat and stir in small carton of single cream.
